The ceremony of caviar

  • The Tin

    Serve it cold

    Rest the unopened tin over crushed ice. Open only at the moment of serving to protect aroma and temperature.

  • The Spoon

    Never metal

    Use mother of pearl, bone, or horn. Metal taints the delicate flavour of the roe, a detail the discerning never overlook.

  • The Pour

    Champagne or vodka

    A brut Champagne or a clean, ice cold vodka. Both lift the brine and let the caviar speak without interruption.

  • The Plate

    Restraint

    Blini, crème fraîche, a breath of chive. Let nothing crowd the pearls. The finest caviar asks for almost nothing.
